Easter Tuesday!

Alleluia, Alleluia! He is risen!

This is the night when you first saved our fathers:
you freed the people of Israel from their slavery
and led them dry-shod through the sea.

This is the night when the pillar of fire
destroyed the darkness of sin!

This is the night when Christians everywhere,
washed clean of sin
and freed from all defilement,
are restored to grace and grow together in holiness.

Welcome to Day 3 of Easter! Last night we had our first of the week of Mexican feasting: roasted lamb with sweet potatoes! Found the recipe in the most recent Canadian Living magazine which uses a really great Mexican spice rub for the lamb leg. It was WONDERFUL! We loved it, and are thoroughly enjoying the leftovers in tortillas with sour cream & homemade salsa. Yum! Tonight we enjoy tortilla soup and taco salad! Hurrah for Mexican style food!

What are you doing for the Octave of Easter?
