7 Quick Takes Friday

One week ago we celebrated Spencer’s 3rd birthday.

I am still finding it hard to believe that in 3 years he can go from this:

How time flies, and soon Cassia will be there too. 4 months have flown by already.

That cake. The Peanut Butter and Jelly Sandwich Cake.

IMG_1151 IMG_1150 While a little crumbly, was absolutely delicious. I would recommend it to anyone. I kept it really simple and used a Duncan cake box mix. I could eat that peanut butter icing all day.

Spencer got “playing” with Cassia this week. At least it was cute and non-destructive or injury-laden.

IMG_1156Sunday I had on my meal plan a Ratatouille Tart, which we made for lunch as my mum was going to be gone for supper. It kind of turned into this spread. I felt so French. It was crazy that it turned into this from my fridge. I loved it. Totally my favourite type of meal – spread out, a little bit of everything, and wine.

5.

Spencer, Cassia and I went for a walk on one of our balmier days. It was beautiful out. I’m so glad I took the camera.

Spencer helped Andy clear our deck. Therefore, he a) got covered with snow and b) had a little fort made for him. What a lucky boy.

7.

Lent starts next week. I have actually given some thought to it, too. I’ve been planning a little here and there and I’m looking forward to the challenges of Lent this year. Our two biggest ones are 1) we are going meat-free for Lent, not including Sundays (which don’t count for Lent’s 40 days anyway) 2) we will be giving up TV (again, not on Sundays). I have our meal plan drawn up and will be sharing that hopefully this weekend. I also have our calendar for Lent nearly ready to go. Just a few more things to work on and it should be done. Anyone else looking forward to being challenged for Lent this year? It feels kinda like Catholic Iron Man or something.

    When I saw that pic of the PB&J sandwich cake I just thought ‘I’m so doing that for my birthday!’. That’s awesome!!! And your kids are so beautiful Jane. Really lovely. So cute to see them playing ha ha. Those are some impressive challenges for Lent. I’m thinking of doing the same (meat free Mon-Sat), trying to get daily mass and to pray the rosary every day. Maybe I’ll try to blog a little too 🙂
